I keep meaning to share more of our favorite plant based (aka vegan) recipes and this one is a quick, easy and super healthy snack! Of course it’s amazingly DELICIOUS!! I made this one day last fall by accident and and when I took a bite fireworks went off in my mouth, it was one of my favorite childhood favorites, oatmeal cookie dough! My mom used to make oatmeal cookies but we’d never bake them and just put the dough in the fridge and eat on it so it’s like biting into my childhood 🙂 Make these and I promise they will be a HUGE hit!!!
Ingredients:
1 1/2 cups rolled oats
1/2 cup pecans
1/2 cup creamy almond butter
Approximately 18 medjool dates
1 1/2 tsp vanilla
3T pure maple syrup
2T hemp or chia seeds
Mix the oats and pecans together in a food processor until it’s almost fine flour.
Decap and pit the dates. Unless they are super soft and gooey you will need to soak them in warm water for 10 mins to soften them up. Add the dates to the food processor and blend until dates are chopped up and mixed in.
Add the almond butter, vanilla, seeds, and maple syrup and blend again until well combined. You may need to pause and move it around and blend again. It should be the texture of cookie dough.
Roll into balls. Makes approximately 25 balls. I store them in the refrigerator and they firm up a bit.
